Roasted Pineapple & Mango Chicken Bowl with Herb-Infused Coconut Rice

 

This Is One for the Books, Guys!

Say hello to your new summer favorite! This bowl is sweet, savory, and straight-up satisfying. The kind of meal that makes your taste buds dance while still showing love to your gut.

INGREDIENTS

(Serves 2–3)

For the Chicken

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • Juice of ½ lime
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp thyme (fresh or dried)
  • ½ tsp sea salt
  • ¼ tsp black pepper
     

Roasted Fruit Topping

  • 1 cup fresh pineapple chunks 🍍
  • 1 ripe mango, peeled and diced 🥭
  • 1 tsp coconut oil
  • Pinch of cinnamon
  • Optional: sprinkle of cayenne or chili powder for a sweet heat kick
     

Herbed Coconut Rice

  • 1 cup jasmine rice or brown rice
  • ¾ cup coconut milk
  • ¾ cup water
  • 2 scallions, chopped
  • 1 tbsp chopped parsley or cilantro
  • Pinch of salt
     

INSTRUCTIONS

 

  • Cook the Rice:
    In a pot, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, reduce to low heat, and cover. Simmer for 15–18 minutes (or until fluffy). Stir in scallions and parsley. Let it sit covered for a few minutes before serving.
     
  • Marinate & Cook Chicken:
    In a bowl, mix lime juice, olive oil, garlic, and seasonings. Coat chicken and let marinate for at least 20 minutes (or overnight if meal prepping).
    Grill or sear in a skillet over medium-high heat until golden and cooked through (about 6–7 minutes per side). Rest, then slice.
     
  • Roast the Fruits:
    Toss pineapple and mango with coconut oil, cinnamon, and a dash of cayenne. Roast at 400°F for 12–15 minutes until caramelized.
     
  • Assemble Your Bowl:
    Layer herbed coconut rice, sliced chicken, and roasted fruit. Garnish with extra scallions, fresh herbs, or a lime wedge.
